One Pot Mexican Rice Recipe


I was feeling a little bored of my usual lunches recently so I experimented this weekend and made this Mexican-style rice and it is DELISH. Here's what I cooked up! 🌯

 

INGREDIENTS

300g basmati rice (raw)

1 onion finely chopped

Half a chorizo, chopped

450ml boiling water 

1 stock cube (chicken, veg or beef will do) 

1 tin kidney beans

1 tin sweetcorn

Couple of handfuls of frozen spinach

1-2 tbsp cumin

1-2 tbsp paprika

1 tsp garlic powder

Salt and pep

 

DIRECTIONS

  1. Wash your rice and drain it.

  2. Heat a big pot over a low-medium heat with some oil. Add your onion and chorizo. Fry for 5-10 mins on a gentle heat until the onions have softened slightly and the chorizo is getting a lil crispy.

  3. Add the drained rice and stir around for 1-2 mins.

  4. Add the boiling water, stock cube, frozen spinach, cumin, paprika, garlic powder, salt and pepper (and any other seasonings you like!)

  5. Bring to the boil, then cover with a lid and turn the heat down to the lowest. Leave to simmer for 20 minutes.

  6. Whilst the rice is cooking, drain a can of kidney beans and sweetcorn (or any other beans you prefer).

  7. After 20 minutes, turn the heat off and take a fork to fluff up the rice. Add the beans and sweetcorn. Taste and add any extra seasoning you feel is missing.

  8. I then made some beef mince to go with it, but it would be lovely with chicken or just on its own (you could add more beans for more protein). To serve, I added chopped fresh coriander and parsley and avocado, but sour cream and cheese would be a great shout too!
